
Bedu roti is an Uttarakhand delicacy, a lighter version of the stuffed puri as it is not deep-fried. It is a flatbread or paratha stuffed with black gram paste, commonly enjoyed in winters, and prepared for special guests. Due to extreme cold, for the Pahadis, it acts as a tonic food full of proteins.
Ingredients
Overnight soaked Urad Dal 250 grams
Whole Wheat flour 250 grams
Garlic
4-5 Cloves
Ginger small piece
2 Chopped Green Chillis
A pinch Turmeric
1 tea spoon Red Chilli Powder
1 teaspoon Coriander Powder
Ghee for applying on the Roti
Salt to Taste
Water for kneading
2 table spoons of Kumaoni Foodlore’s Aamtokh
Step 1
Take the flour and add salt and ghee to it. Knead the dough with less amount of water.
Step 2
In a grinder add all the ingredients and make a coarse paste with less water otherwise it will be difficult to stuff it in and make the roti.
Step 3
Stuff the paste into the dough and bake it on a pan from both the side.
Step 4
Apply ghee and serve it hot with Kumaoni Foodlore’s Aamtokh.
